Onion Thing

This one doesn’t have a Hough name yet, we call it the Onion Thing. It’s from Missy’s mom and even though we don’t like onions, we love this! (Maybe from all the extras?!) It’s a fun treat, not low in the fat category! : )

1/4 c melted butter, plus 2 T (divided)

3 medium sweet onions

2 c grated swiss cheese

1 1/2 c crushed saltines, divided (I use 1 sleeve, it’s close enough, and then I can crush them in the sleeve)

2 eggs

3/4 c light cream or half and half

1 t salt

1/4 t pepper

Melt 1/4 c butter in large skillet and saute onions until tender. Place half the onions in a 2 qt dish. Sprinkle one cup swiss cheese and half of the cracker crumbs over onions. Repeat layers of onions and cheese.

Beat eggs with cream, salt and pepper. Pour evenly over onion mixture. Heat remaining 2 T butter in skillet and stir in remaining cracker crumbs. Lightly brown crumbs, the sprinkle over casserole. Bake at 350 for 25 min. or until set.

    That looks, almost smells scrumptious! I printed it off for Cheri. Kind a sounds like you might call this a scallop onion dish.
