These are my favorite from the book so far.
1/2 c butter, softened
1/2 c sugar
1/2 c brown sugar
1-1/2 c mashed ripe bananas (about 3 large)
3 t vanilla extract
2 cups all purpose flour
3 t baking soda
1 c chopped walnuts
1 c chocolate chips
Cream butter and sugars. Beat in eggs, bananas and vanilla. Combine flour and baking soda and add to creamed mixture just until combined. Stir in nuts and chocolate chips. Fill 24 greased muffin tins half full.
Bake at 350 for 15-20 min. Cool 5 min in tins.
