Pork Tacos

Maggie introduced me to Picky Palate. This was the first thing I made and they were SO great! Click here for her recipe. I made the rice too, it was just ok, not a redo, but the tacos and salsa are keepers for sure! It was a lot of prep, but I think now that I’ve done it once it will be easier. I found the flatbread at Costco.

“Greengo” Bake

Tried this recipe a few weeks ago and it’s a new Hough favorite! I like it cause it’s easy, Brian just likes it cause it’s yummy!

4 1/2 c shredded, cooked chicken (I use half a rotisserie, close enough!)

2 cans green enchilada sauce

10 oz sour cream

6 or 7 corn tortillas, torn into 2 inch-ish pieces

4 cups cheddar jack cheese

In a greased 9×13, layer half of the chicken, one can of enchilada sauce, half of the sour cream, half of the tortillas, and 2 cups cheese. Repeat layers. Bake covered at 375 for 40 min. Uncover and bake another 5-10. Let it set 5 min. before serving.

The lame name (ie: the one it came with) was Chicken Enchilada Bake, but those never stick around here.

Festive Avocado Chicken

It stinks when “new recipe” night is a bust, but worth it when it’s a redo, and tonight was a redo night! After Brian tasted it he tried to bribe me for my portion by telling me he would take me to McDonalds for my dinner; Becks ate over half an avocado and downed the tomatoes (two of his favorite foods! He had to be reminded to eat the chicken also; he ended up cleaning his plate though!) and Sadie Piper took maybe a bite and spit the tomato out. But I will now have to buy our avocados at Costco cause this will be one of the most requested meals around here.

It looks like a lot of work, but I did all the prep during nap time (chopped tomatoes and onion, pounded chicken, diced garlic) and it came together in 30 min. after that.

After I took a picture of my plate Becks wanted me to take one of his too. And you know what that means? Sadie Piper does too!

Peanut Butter Fudge

I’m really glad I have so many things to bake for, cause I have a ton of recipes collected up that I want to make! This was the latest, and about halfway through baking, I realized that summer really isn’t “fudge season.” They made the cut to make again, but not until the Holidays. They are like a rich Reese PB cup, yum!

EASY Peanut butter chocolate cookies

Until now I’d only made Funfetti cake cookies and one batch of chocolate. Roxie gave me the great idea of added peanut butter chips to the chocolate ones. They were worth making again! Who doesn’t love PB and chocolate?? I’ll also try adding real chocolate chips too!

Chocolate cake mix box, 1/3 c oil, 2 eggs, half a bag (ish) of peanut butter chips. Mix, 350 for about 10 min.

Onion Thing

This one doesn’t have a Hough name yet, we call it the Onion Thing. It’s from Missy’s mom and even though we don’t like onions, we love this! (Maybe from all the extras?!) It’s a fun treat, not low in the fat category! : )

Funnest baking project ever!

It took Brian a good 15 seconds to get up the courage to take a bite. It really messes with your head! It’s yummy once you can make yourself take a bite, but they sure look like mini burgers! Found these online and knew I had to try them out!

Cinnamon Buttons

When Beckham and I were making these, he asked what they were called and when I told him “cinnamon buttons” he said, “like you push them?” So think they need a new name.

Super easy and kinda like monkey bread, but makes much less, takes less time, and is a fun breakfast treat!

Mex-zanya

I know it has an official other name, but we thought it tasted like Mexican Lasagna, so we’re sticking with that name at the Hough house. The recipe also called for weird, non-Mexican things like kidney beans and green bell peppers (guess a northerner came up with some of it). I substituted pinto beans and green onions. Oh, and it called for chicken. I made taco meat instead. I’ll stick with my changes when we make it again. It has a lot of layers, but once everything is gathered, it’s a breeze to throw together.
